The Nile has in fact shifted a little. Certain parts of the river have moved slightly eastward over the last 7000 years, the portion that is near the Giza plateau being among them.

Gemini: Why the Claim Exists (The Geological View) In 2019, a famous study published in Nature Geoscience revealed that on a massive, macro scale, the Nile's overall northward corridor (flowing from the Ethiopian Highlands to the Mediterranean) has stayed remarkably stable for roughly 30 million years. Most long-lived rivers shift across entire landmasses over millions of years due to continental drift. The Nile didn't because deep mantle convection currents under the Earth's crust act like a gentle conveyor belt, maintaining a slight downward slope to the north.

The Nile used to be right up against the Giza plateau where the great pyramids. You can see its old riverbed there and where the Nile currently is. The Nile has moved all over the place in its past but most generally has moved east of its ancient riverbed. Now that the Nile is damed up it doesn’t shift much anymore as the floods are much less
