I’m a chocolatier and make caramel fillings for a living…if you’re doing a dry caramel with NO WATER, you have to CONSTANTLY stir the sugar until it’s all melted and reaches a medium amber colour, a bit lighter than what you did! You also MUST stir when addding the cream in and add the cream little by little!
