Save and try this ✨Simple olive brine recipe✨ It’s Olive season (in the Northern hemisphere), so sharing this again. It’s simpler than all the other recipes I’ve tried because no need to slit or crush the olives, or soak in water first or change the brine etc… those are all additional steps, but here’s the foundation: Ingredients * Fresh olives * Water * Salt * Optional: lemon slices, garlic, bay leaves, or herbs for added flavor -Steps- 1️⃣Sterilize Jars using boiling water. 2️⃣Prepare the Brine: Combine 1 liter of water with 100g sea salt and 80-100g vinegar. Stir until the salt is completely dissolved. 3️⃣Fill Jars: Place the olives in the sterilized jars with seasonings, leaving a bit of space at the top. 4️⃣Add Brine: Pour the prepared brine over the olives until they are completely submerged, leaving some headspace. 5️⃣Weigh Down the Olives: Place a clean, sterilized weight (like a glass or ceramic disc) on top of the olives to keep them submerged in the brine. 6️⃣Seal and Store: Seal the jars loosely so that gases can escape while still keeping contaminants out. Store the jars in a cool, dark place for at least a few months. Taste test periodically to see when they’ve reached the desired level of curing. 7️⃣Add Olive Oil Seal: Once cured, pour a layer of olive oil on top of the brine to create a seal before resealing the jars.
