Kadınbudu Köfte is one of the classic meatballs of Turkish cuisine. Its name literally means “lady’s thigh meatballs” a humorous Ottoman-era name referring to the oval shape of the patties (although my mom shapes them round). What makes this köfte unique is the technique: part of the ground beef is cooked with onions while the rest stays raw, then both are mixed with rice and herbs. It is a nostalgic comfort food often served with rice pilav, smashed potatoes or a fresh salad and it frequently appears on Turkish guest tables and family dinners!  The most delicious Kadınbudu Köfte I have ever eaten comes from a recipe my mom got from her late cousin Suzan about 30 years ago. It has been one of the must-have dishes on our guest tables since then🥹 Whenever she makes it, she takes out that old recipe book and gets to work. Like many moms, the ingredients in her notebook are written “by eye” and I still don’t understand how it turns out exactly the same every single time. But let me tell you how she makes it. She sautés two thirds of the ground beef with chopped onion until all the liquid evaporates. To the remaining raw beef she adds parsley, boiled rice (she uses leftover rice she froze), an egg, grated kaşar cheese, black pepper and salt. Once the cooked beef and onions cool down, everything is combined and kneaded well. If the mixture feels too soft, one spoon of breadcrumbs (galeta unu) can be added. After shaping the patties, she coats them on both sides with breadcrumbs and lets them rest in the refrigerator for at least an hour. When ready to cook, the patties are dipped in beaten egg and fried in hot oil until golden. And just like that my favorite Kadınbudu Köfte is ready, afiyet olsun! For about 24 köfte: 1 kg ground beef 1 large onion 1 egg Parsley Black pepper & salt 5–6 tbsp cooked rice 2–3 tbsp grated kaşar cheese (optional) 1 tbsp galeta unu (breadcrumbs) if the mixture is too soft For coating: Breadcrumbs 2–3 beaten eggs Oil for frying • #foodieedaRecipe #turkishfood #turkishcuisine #comfortfood #meatballs
