Watermelon Feta Salad with Balsamic Glaze Salad: 2 cups seedless watermelon, cubed 1 cup cucumber, sliced 1/2 cup feta cheese, crumbled 1/4 cup fresh mint leaves, chopped or whole half small red onion, thinly sliced Dressing: 2 tbsp olive oil 1 tbsp fresh lime juice (or lemon) 1 tsp honey Salt & black pepper, to taste Balsamic Glaze Finish: 2–3 tbsp balsamic glaze Instructions 1. Prep ingredients Cut watermelon into cubes, slice cucumber, and thinly slice red onion. 2. Make dressing In a small bowl, whisk olive oil, lime juice, honey, salt, and pepper. 3. Assemble salad In a large bowl, combine watermelon, cucumber, red onion, and mint. 4. Toss lightly Drizzle dressing over and gently toss to combine. 5. Add feta Sprinkle crumbled feta on top. 6. Finish with glaze Drizzle balsamic glaze over the salad in a light zig-zag pattern. 7. Serve immediately Best served fresh and chilled.
