I’ll never turn down any pasta salad, especially when it’s made with a fresh creamy pesto ;) This pesto recipe is fully inspired by Sommer’s Creamy Pesto Sauce recipe over on aspicyperspective.com ❤️ I made a few adjustments to make it for my Summer Pasta Salad paired with cherry tomatoes, mozzarella balls, and crispy pancetta 🤭 Here’s what you’ll need: For the pesto: 2 cups packed fresh basil leaves  ½ cup pine nuts ¾ cup grated pecorino romano cheese 2 large cloves of garlic 1 tsp fresh lemon zest 2 tsp fresh lemon juice ½ cup + 1 tbsp extra virgin olive oil  1 cup heavy cream Salt & pepper to taste For the pasta salad: 9.5oz cavatappi pasta (or 269 grams. Weigh before cooking!) Sliced cherry tomatoes to taste 8oz mozzarella balls 4oz diced pancetta (more or less to taste) Homemade creamy pesto  Make the pesto: - In a food processor, pulse together the fresh basil, pine nuts, pecorino romano, garlic, lemon zest, lemon juice, and salt & pepper. Pulse until you have a fine granular texture  - Add the olive oil and heavy cream and then mix on low speed until everything is combined and you have a silky smooth texture. - Be sure to scrape the sides of the food processor bowl to ensure that everything is well incorporated - Add the pesto to an air-tight container & refrigerate until you’re ready to use it Assemble the pasta salad: - Cook your cavatappi pasta according the package instructions - Cook the pancetta in a small skillet over medium heat until it has reached your desired crispiness  - Once your pasta is cooked, drain it well (do not rinse it!) & add it to a large mixing bowl - Add your sliced cherry tomatoes, mozzarella balls, and cooked pancetta to the pasta - Add as much or as little of your creamy pesto as you’d like to the bowl - Toss until all of the pasta is coated with your pesto  - Serve immediately (my personal preference) or store in air-tight containers in the fridge for up to 3-4 days The full recipe is also on my Osta linked in my bio! #pasta #pestopasta #summerrecipes #pastasalad #EasyRecipe
