Today’s menu: Umma’s tteokguk (Korean rice cake soup) My mom came to visit us from Korea, so we were lucky enough to spend New Year’s together this year. Our family always eat tteokguk first thing in the morning on January 1st, so I asked her to make it with me using her recipe. I’ve always loved cooking with her because we work so well together without having to say much. (And also amazed at how she cleans up the kitchen as she cooks.) We couldn’t find the exact brands for some products she usually uses back home, but even then, it turned out just as comforting and delicious. 👩🏻‍🍳 Mom’s Tteokguk Recipe (for three servings) Ingredients •200g thinly sliced ribeye (scotch fillet) •2 eggs, separated •Seaweed (gim) •400g sliced rice cakes (tteok) •500ml beef bone broth •200ml water •Green onion, finely sliced For the beef seasoning •1 tsp soup soy sauce •1 tsp anchovy fish sauce (or tuna fish sauce) •½ tsp sugar •1 tsp sesame oil •1 tsp minced garlic Instructions 1.Soak the rice cakes in cold water while preparing the other ingredients. 2.Pat the beef dry with a paper towel and place it in a bowl. Add soup soy sauce, fish sauce, sugar, sesame oil, and minced garlic. Toss well and let it sit briefly while you prepare the toppings. 3. For the egg garnish, lightly season the egg whites and yolks separately with a pinch of salt. Heat a pan over low heat with a little oil, pour in the eggs, and spread thin. Roll like an omelette, slice thinly, and set aside. 4. Umma prefers using unseasoned gim, lightly toasted over an open flame. If you don’t have it, seasoned gim works too. 5. Heat a pan with a little oil over medium heat and lightly saute the seasoned beef until just cooked through. Set aside. 6.In a pot, add the bone broth and water and bring to a boil. Add the soaked rice cakes. (She also added 1 tsp anchovy fish sauce to the broth, but taste and adjust if needed.) 7.Stir gently so the rice cakes don’t stick. Once the rice cakes all float to the top, they’re fully cooked. 8.Serve the soup into bowls and top with the beef, egg garnish, seaweed, and green onion. Finish with a pinch of black pepper and a drizzle of sesame oil. #떡국 #새해 #newyear #koreanfood
