I worked at a bakery in my early 20s where we actually added amaranth to one of our breads. We would grind our own wheat in house, add amaranth, quinoa, poppy seeds, sunflower seeds and pumpkin seeds to the dough. It was amazing. I still make it to this day.

I have grown amaranth and it's delicious, I'm thinking since it would naturally just drop all it's seeds close by, has a high germination rate, and has relatively shallow ish roots like corn, it may benefit from being grown very densely to prop each other up and get (hopefully) more grain per area

Technically magenta, cyan and yellow are the primary colours not the red blue yellow we typically use. So it’s not purple. It actually is a primary colour in of itself!

From a farming perspective, you can’t get much better than amaranth in the south. It requires far less water than any other staple grain, has a really high output, and the seed per acre is really low. We are going to be chaos sowing it across our acreage this year to help break up the soil
