If you’re making mashed potatoes from scratch, not instant boxed, use a cup of the water that the potatoes were cooked in instead of plain water. It makes your gravy like silk. Watch your salt in the seasoning if you use the potatoe water because you salt the potatoes when you cook them. The starch in the potato water makes such smooth gravy.

I like to make a lot of roux and put it in a jar to keep in the fridge. Then just scoop a tablespoon or so out as needed and add water. Having roux on hand is such a time saver for quick meals.

And if it gets lumpy just keep whisking! Add more liquid as needed and keep whisking! The lumps will whisk out. For the beginners. Gravy is easy but takes a few try’s to do it right.
