Firmly press the mixture into the bottom of your pan to create an even base. Refrigerate while preparing the cheesecake filling. 2. Make the Cheesecake Filling In a large mixing bowl, beat the softened cream cheese and mascarpone until completely smooth and creamy. Add the powdered sugar, vanilla bean paste, and lemon zest. Mix until fully incorporated. Gradually add the cold heavy whipping cream and continue whipping until the cheesecake mixture becomes thick, smooth, and holds its shape. 3. Create the Reverse Cheesecake Spread the cheesecake filling over the Biscoff base, concentrating the filling around the outside and leaving a generous well in the center. Gently spoon the warmed Biscoff cookie butter into the center well, spreading it evenly without disturbing the cheesecake filling. 4. Finish Drizzle a small amount of melted Biscoff cookie butter across the top of the cheesecake in a thin zigzag pattern. Keep the presentation clean. No additional cookie crumbs are needed on top. 5. Chill Refrigerate the cheesecake for at least 4 hours, preferably overnight, until completely chilled and set.
