There are plenty of interactions that can confuse the game with cut content. I guess this is one of them. Another one is during the mission with Charles where you go to find Trelawny after he was captured by bounty hunters. If you kill one of those first 2 guys you fist fight at the start of the mission, a cut cutscene will play where the dialogue doesn't really make any sense. Game was going to be far less structured but Rockstar ran out of time and had to cut a lot of content. If I could wish one game into existence it would be a directors cut of rdr2 with all it's cut content because the game which is already perfect would somehow be even better.

This would just be the same mechanical that they use for any mission that involves more than 1 person probably just made the npc realize if they're are 2 rendered models then he says fellers I feel like for red dead its a simple mechanic they reuse for certain things
