Banana Caramel Sticky Pudding:  For the pudding: 4 small ripe bananas 100g butter, melted and slightly cooled ½ cup brown sugar 2 eggs 1 tsp vanilla ½ cup milk 1½ cups self-raising flour ½ tsp cinnamon Pinch of salt For the caramel: 100g butter 1 cup brown sugar 1 cup thickened cream Pinch of salt Method: Preheat your oven to 170°C fan-forced and grease a 10 x 10 inch baking dish, or something similar. Chuck your bananas into a bowl and mash them until nice and smooth. Add the brown sugar, eggs, vanilla and milk, then whack in your melted, slightly cooled butter. Give it a good mix. Add the self-raising flour, cinnamon and salt straight into the bowl and mix until just combined. Don't go crazy mixing it. Chuck the batter into your greased baking dish and pop it into the oven for about 35 minutes, or until lightly golden and cooked through. While that's baking, let's make the caramel. Pop the butter, brown sugar, thickened cream and a pinch of salt into a saucepan over medium heat. Stir until everything has melted together and the sugar has dissolved. Bring it up to a boil, then turn it down and let it simmer for 3–4 minutes, giving it a stir here and there. Take the caramel off the heat. When the pudding comes out of the oven, poke holes all over the top. Pour most of that gorgeous warm caramel all over the pudding, letting it soak down into all those holes. You can save a little bit to drizzle over the top, or just chuck the whole lot on.  Serve it warm with a big scoop of vanilla ice cream and extra caramel if you're feeling extra.
