Chicken Caesar Smash Tacos 🌮🥗 Recipe below👇 Makes 4 tacos  Ingredients:  1 lb ground chicken 4 tortillas (I used Rise & Puff)  Salt & pepper  Parmesan  Romaine, chopped Caesar Dressing:  1 garlic cloves, finely grated  1/2 tsp anchovy paste Juice of half a large lemon 3/4 tsp stone ground mustard 1/2 tsp tamari soy sauce Pinch of salt & few crack of pepper 1/4 cup avocado oil mayo Heaping 1/4 cup finely grated parmesan cheese 1/2 teaspoon extra virgin olive oil Homemade Croutons:  3 slices of bread (I used One Mighty Mill) EVOO Salt & pepper  Directions:  Prepare the Caesar dressing first. In a medium size bowl, add the grated garlic, anchovy paste, lemon juice, mustard, soy sauce, salt & pepper. Whisk well.  Add the mayo, parm cheese, olive oil, and whisk very well. Check for seasoning. You may need more parm cheese or lemon. You want the flavor to be bold and aggressive. Place in fridge to rest.  Prep the croutons by slicing off the edges of the bread, then cutting into cubes. Toss with a little bit of EVOO, salt and pepper, then bake at 350F for about 13-15 minutes tossing it halfway through.  Divide the ground chicken into 4 equal portions. Take one and press it out evenly on a tortilla from edge to edge. Repeat for the remaining tortillas then season with salt and pepper. Place a pan over medium heat with a little avocado or EVOO, then add the tortilla chicken side down and cook til golden, flip and cook til the tortilla is nice and crispy. Repeat with remaining tortillas.  Toss the chopped Romaine with some of the Caesar dressing, then top the tortillas with the salad, croutons, and a generous amount of shredded Parmesan.
