Creamy Smoked Gouda Shrimp & Grits Ingredients * 1 lb large shrimp, peeled and deveined * 12 oz andouille sausage, thinly sliced * 6 slices bacon, diced * 1 red onion, finely diced * 1 green bell pepper, finely diced * 1 yellow bell pepper, finely diced * 1 red bell pepper, finely diced * 1–1½ cups heavy cream * 1½-2 cups freshly shredded smoked Gouda * ¼ stick butter * Olive oil * Tony Chachere’s Creole Seasoning * McCormick Buttery Garlic Seasoning * Old-fashioned grits * Butter (for the grits) * Sliced green onions, for garnish (optional) Instructions 1. Prep the ingredients: Finely dice the red onion and all three bell peppers, then mix them together and set aside. Thinly slice the andouille sausage on a slight diagonal and dice the bacon into small pieces. 2. Cook the sausage: Heat a drizzle of olive oil in a large skillet over medium-high heat. Add the sausage and cook until browned on both sides. Remove and set aside. 3. Cook the bacon: In the same skillet, cook the diced bacon until crispy. Remove and set aside, leaving the rendered bacon fat behind if desired. 4. Season and cook the shrimp: Pat the shrimp dry and season generously with Tony Chachere’s Creole Seasoning and McCormick Buttery Garlic Seasoning. Add a little fresh olive oil and the butter to the skillet, then cook the shrimp for 2-3 minutes per side, just until pink and cooked through. Remove and set aside. 5. Make the sauce: Add the diced onions and peppers to the same skillet and sauté until softened. Pour in the heavy cream and bring to a gentle simmer. Season with more Tony Chachere’s Creole Seasoning to taste, then stir in the freshly shredded smoked Gouda until melted and the sauce is smooth and creamy. 6. Bring it together: Return most of the cooked sausage, bacon, and shrimp to the skillet, reserving a little of each for garnish. Let everything simmer together for a few minutes so the flavors combine. 7. Prepare the grits: Cook the old-fashioned grits according to the package directions (about 15 minutes).
