@touchedbypenandpaper: New week, another weekly setup in my Hobonichi Cousin. This week’s theme is bubbles! I used Mind Wave die cut bubble washi tape and Moehrenkunst bubble stickers. They are a match made in heaven! Just different shades of blue. I really like this weekly spread. BUFFALO CHICKEN THIGHS 🍗🔥 Ingredients: - chicken thighs (or any part) - fish sauce - black pepper - calamansi - all purpose flour - cornstarch - breading mix for chicken For the sauce: - margarine - sweet chili sauce - ketchup - oyster sauce (optional) - honey - sriracha - vinegar Dipping sauce: - mayonnaise - black pepper - garlic powder - sugar - water Instructions: 1. Prepare the thighs, seasoned with it fish sauce, pepper, and calamansi. Better if you marinate the chicken for 4 hours or overnight. 2. Coat the wings in flour, cornstarch, and breading mix. Shake off any excess. 3. Fry the chicken in batches for 8-10 minutes, until golden brown and crispy. Remove and drain on paper towels. 4. In a saucepan over medium heat, add the margarine, garlic, sweet chili sauce, ketchup, oyster sauce, honey, sriracha, vinegar, and minced garlic. Stir well and simmer for 5 minutes until the sauce thickens slightly. Adjust spice or sweetness as needed 5. Place the fried chicken thighs in the sauce and toss until fully coated. 6.
