I think there is a saying in Japan that grilled eel is one of the hardest to perfect. It goes something like it takes 5 years to perfect how to cut and prepare, but it takes a lifetime to master how to grill it to perfection. Really want to try this 86 year shop as the lady grilling definitely has been doing this for all her life.
