In February 1898 the Savoy in London fired César Ritz, the most celebrated hotelier alive, and his chef Auguste Escoffier, with no public explanation. Four months later Ritz opened the Ritz Paris on Place Vendôme, then the Carlton in London, and high society followed him out the Savoy's doors. His name entered the dictionary as the English word for fancy. He died in 1918 never knowing his secret was safe.
