This might be the ultimate fusion dish! Food Wars combined mapo tofu, Japanese curry, and a Taiwanese meatball into a noodle dish and it blew my mind Comment something nice and follow for more anime food Mapo Tofu Recipe - 1lb ground pork - 2-3 inch knob ginger - 6 cloves garlic - 6 whole green onions - 1-2 tbsp ground Szechuan peppercorns - 1/3 cup shaoxing wine - splash of black vinegar - 1/4 cup soy sauce - 2 cups chicken stock - I like to use medium tofu for this. I know some people do silken but I like a little more texture - 4 tbsp doubanjiang - 2 tbsp douchi - 2-3 tbsp sugar - 2 big pinches of salt and msg - 1tbsp cornstarch slurry - 1/4 cup lard Start by prepping your vegetables. Grate all of the ginger and garlic. Reserve half of the ginger for marinating the pork. Add ginger salt pepper and a splash each of soy sauce and shaoxing wine. Knead to combine. Brown the pork in a wok then add in all of your vegetables, saute. Add in your pastes and peppercorns. Cook for a couple more minutes before adding chicken stock, soy sauce and shaoxing wine. Season here. I like to reduce this down by about 1/3 before adding the slurry. Allow to thicken then add in your tofu and green onions tops. Meatball recipe - 1 lb ground pork - 1 egg - 1/2 cup bread crumbs - 3 ground star anise - 1/2 tbsp Chinese 5 spice - 1 tbsp ginger garlic powder - salt, white pepper and msg Japanese curry powder”moon” - Japanese curry roux (check my one piece navy curry video for the recipe - 2 cups beef stock - 1 packet of gelatin Combine everything bring to a simmer then let set in the fridge.
