@withelissa_ann: A few days each week, I’m going to make a handful of homemade items to stock my fridge and freezer before school starts. Nothing overwhelming—just a little at a time so we’re ready for those busy mornings, packed lunches, and hectic weeknights. My goal is to fill our freezer with homemade favorites that make life a little easier and keep stress to a minimum when school is back in full swing. Future me will definitely be thankful! 💛 Mini Cinnamon Rolls Dough 1 cup warm milk 2.5 tsp yeast 2 eggs 1/3 cup melted butter - cooled 1/2 cup sugar 1/4 tsp salt 4.5 cups all purpose flour Filling 1/2 cup melter butter 1/4 cup brown sugar 2 tbsp cinnamon 1 tsp vanilla Icing 1.5 cups powder sugar 1/4 cup softened butter 2+ tbsp milk Splash of vanilla Mix the warm milk and yeast together and let it sit for about 5-10 mins until foamy. Then add the rest of the ingredients- add the flour one cup at a time mixing in between each cup. If the dough is too sticky and sticks to your finger when you poke it, add 1-2 tbsp at a time until no longer sticky. Knead your dough for about 10 mins. Cover and rest for 1.5 hours until it has doubled in size. Before making the cinnamon rolls, make the filling. Mix all of the ingredients together to form a thick paste like consistency. Next, split the dough into two balls. Roll each out one at a time. Spread a layer of the filling onto each one. Cut into 1 to 1.5 inch strips that are about 5” long. Roll up and place into a sprayed mini muffin pan. Cover pans and rest for 40 mins. Bake at 350 for 15-18 mins or until golden brown. Make icing and drizzle on top. Store in pans or large fallow ziplock bags in the freezer for up to 3-4 months. The morning you want to make have them, pop them into your microwave and heat for 30 seconds on 70% power - do it a bit longer if needed until they are slightly warm. Quick and Easy Dinner rolls 1 cup warm water 1/3 cup oil ( I use vegetable oil) 1/4 cup sugar 2 tbsp yeast 1 egg 1 tbsp softened butter 1 tsp salt 3.5 cups all purpose flour 2 tbsp melted butter to brush on top after baking Preheat oven to 400. In a large bowl combine water, oil, sugar and yeast. Let it sit for 5-10 mins until foamy. Mix in egg, softened butter, and salt. Mix in flour - 1 cup at a time until the dough is no longer sticky. Knead for 5 mins. Divide dough into 18 small dough balls and form balls. Placed in a greased pan and let them rise for 20 mins covered. Bake for 10-12 mins or until golden brown. Brush with melted butter after done baking. Store in large ziplock bags in the freezer for 3-4 months. The easiest sandwich bread - makes 2 loaves 2 cups warm water 2 tsp instant yeast (or 1 packet) 1/4 cup of sugar (or honey works too) Mix together and wait 10 mins until foamy and bubbly Add: 1/4 cup melted butter (cooled) 2 tsp salt 5-6 cups of flour Knead for 10 mins. Rest covered on the counter for 1 hour. Punch down and shape the loaves - put into pans. Cover pans and let them rest again for another hour.
