Thanks for the inspo Mrs. Bieber 🙂‍↕️ I genuinely make these chicken meatballs weekly because my whole family devours them. Highly recommend doubling the recipe! You can make these your own but it’s a great base recipe. Add pesto, swap the parm for feta for Greek bowls, omit the cheese and use teriyaki sauce instead of tomato, the possibilities are endless! Chicken Meatballs in Tomato Sauce (makes 4 servings) Chicken Meatballs: 1 lb ground chicken 1 egg 1/2 cup panko bread crumbs 2 cloves garlic, minced or grated  1/2 cup grated Parmesan cheese 1 teaspoon kosher salt 1 teaspoon Italian seasoning  1/4 teaspoon black pepper  2 tablespoons olive oil for cooking To serve: 1 24 oz jar marinara sauce or your favorite tomato sauce (I love Rao’s) Full fat cottage cheese Grated Parmesan cheese Salt & pepper to taste  Fresh basil  Instructions: In a large mixing bowl, add the ground chicken, egg, breadcrumbs, garlic, cheese, salt and pepper. Mix to combine (I use my hands) and form into golf ball sized balls. Heat 2 tablespoons of oil in a large pan or skillet over medium heat. Add the meatballs and cook for 3-4 minutes until golden brown, then flip. After 2-3 minutes, add the tomato sauce. Simmer over medium low heat for 5-10 minutes or until the meatballs are cooked through. Season to taste with salt and pepper. Serve with a generous scoop of cottage cheese on top.
