A Michelin restaurant wouldn’t care if you didn’t eat it but would like to know so they can use that for the next menu or provide an alternative if available. I went to one where I said I knew a dish was probably amazing but I had texture issues with fatty meat. The chef provided a vegetarian substitute that was amazing. Another restaurant was heavy cilantro and I am one of those that tastes soap so they left the ingredient out. It’s not always possible but even just telling them you’re skipping this course or that you tried it and it wasn’t for you can help them and yourself.
