I don’t understand why someone would spend all of the time and money it takes to can and not follow safe procedures. I would never forgive myself if someone got ill or died because II wanted to rebel can.

somehow .....must be a miracle ordained by heaven but my family has survived for over 100 years by NEVER adding lemon juice or citric acid to any tomato products. As a matter of fact....we've NEVER even water bathed our tomato products. We open kettle cann them all. I can't believe how lucky we must be 😏

OMG, I’ve been wanting to learn how to can food for years, and I was seriously thinking about investing in everything I needed to get started. But after seeing this… I don’t know anymore. 😳
I think I’m just going to buy a freeze dryer instead. I’d be terrified I’d mess something up and accidentally poison or kill my whole family because I canned something the wrong way. Nope… that kind of pressure is too much for me! 😩😂

This video is great. Canning is relatively simple. The science is proven. Pressure canning is also not the scary thing people think it is. just buy a good pressure canner. I recommend the Presto. It will double as a water-bath canner, so save on space. You can get it at Ace hardware and they carry replacement parts as well.

In the 1970s 80s and 90s, you did not have to treat your tomatoes with any citric acid or lemon juice. I hadn’t canned since the 90s and when I started canning again, I learned this that tomatoes have been altered for people with acid reflux or GERD.
