🤠 Cowboy Casserole — A Little Comfort for My Family 🤍 Last week, before my grandma’s funeral, I made this big batch of Cowboy Casserole for my family. My grandma was always cooking and making food for our family and friends. So being able to make something to share with everyone felt especially meaningful. And once again, I got to use my grandma’s mixing bowl. 🤍 It feels like such a simple thing, but being able to use something that belonged to her while carrying on something she loved doing means so much to me. BIG BATCH RECIPE 🥩 Meat • 2½ lbs ground beef • 1 onion, diced • Minced garlic • Garlic powder • Salt & pepper • Worcestershire sauce • Kinder’s Cowboy Butter • 1 can black beans • 1 can corn • 2 cans Rotel 🌽 Cornbread Topping • 3 boxes Jiffy Corn Muffin Mix • Milk & eggs according to package directions • Kinder’s Cowboy Butter • Shredded cheese Directions: Brown the ground beef with onion and minced garlic. Season with garlic powder, salt, pepper, Worcestershire sauce, and Cowboy Butter. Add the black beans, corn, and Rotel and cook until everything is combined and heated through. Prepare the three boxes of Jiffy according to the package directions with milk and eggs. Mix in Cowboy Butter and cheese. Add the meat mixture to a baking dish and spread the cornbread mixture over the top. Bake at 375° for 25–30 minutes. Add more cheese on top and bake another 5 minutes until melted. Top with sour cream and extra cheese and serve! A recipe made for family, in my grandma’s bowl, just like she used to make food for all of us. 🤍 When you lose someone you love, there really aren’t words that can make it easier. But you can show up. You can cook. You can feed your people. You can take care of each other.
