@tom.smallwood: Pork knuckle at home Firstly go to your butcher and ask for a pork knuckle. They should have plenty. Mine was 1.5kg and cost $14, cheaper on weight compared to the pre-made version but more expensive overall (marginally). Sous vide is overboard for this, but I remembered I bought one in 2019 and wanted to use it. Skip the sous vide and leave the pork uncovered overnight in the fridge to dry out the skin. Optionally score the skin and season with salt, pepper and onion powder, cover tightly with foil and slow roast at 160°C for about 3 hours Remove the foil and crank the heat up to 240°C for 20-40 mins to crisp up the skin.
