In a mixing bowl, cream butter and sugar until light and fluffy. Add the egg yolks and vanilla, then mix well. 2. In another bowl, sift together flour, baking powder, and salt. Gradually add this into the butter mixture, mixing until a soft dough forms. 3. Lightly flour a surface and roll out the dough to about 6mm thick. Cut into rings using a round cutter, then punch a smaller hole in the center. 4. Place the cut dough on a greased or parchment-lined baking sheet. Bake in a preheated oven at 175°C (350°F) for 12-15 mins, or until lightly golden. Cool completely on a wire rack before storing in an airtight container.
