In the Soviet Union, almost every family believed they knew how to cook pilaf. We certainly did. For years, I proudly served what I called "pilaf," never realizing it was little more than rice porridge with meat. Everything changed after my wife and I were invited to my Uzbek coworker Bakhodir's birthday, where I tasted authentic Ferghana-style pilaf for the very first time. One spoonful was enough to change everything. The rice was perfectly fluffy, the lamb melted in my mouth, and the aroma of cumin, barberries, garlic, and slow-cooked spices was unlike anything I had ever experienced. I couldn't help but admit that it was the best meal I'd ever eaten. Laughing, Bakhodir kindly wrote down his family recipe and encouraged me to try making it myself. The very next day I bought lamb, kurdyuk fat, long-grain rice, garlic, cumin, barberries, and everything else needed to recreate the real thing. Following every step of his recipe, I carefully prepared the zirvak, sliced the carrots by hand, and slowly cooked the pilaf in a heavy cast-iron kazan. The result completely transformed the way our family thought about this legendary dish. From that day on, our old version of pilaf disappeared forever. Every holiday, my children would ask me to make "Uncle Bakha's pilaf" again, and it quickly became the most requested meal in our home.
