So my cottage bakery is brand new. I bought a Bosch Mixer with an extra bowl because I didn't want to burn out when just getting started. I've had a lot of trouble with the Bosch getting so hot it literally cooked my dough (I specialize in cinnamon rolls, which is also an enriched dough), and every single time, the dough got too hot, my yeast didn't survive several batches. I finally got Nutrimill to send me a new machine and it just arrived yesterday! So we'll see but so far, not so good. At the same time, I decided to purchase an extra large Joydeem dough mixer because my cinnamon roll recipe was developed using a bread machine and I wanted it as a backup to my Bosch. The Joydeem is WONDERFUL. I love it and wish I had just bought two of them instead of investing $800 in the Bosch. It's too late now of course and maybe the new Bosch will work out, but if I had to do it all over again, I would get two Joydeem 9qts. $130 each. I feel so dumb. 😂

Bosch works great, can warm up the dough but is manageable. Likes a bassinage for moderate to high hydration doughs. Have you considered the Ankarsrum? Makes great brioche.

That’s because KitchenAid stopped using all metal parts. Either find vintage KA mixers or find a different brand.

I have the kitchenaid Bowl lift for 13 years and I recently added the Ankarsrum mixer. One for cookies and the new one for breads and heavy doughs

I love the Bosch for kneading bread dough. It is a big improvement over kitchen Aid. The Bosch can handle a lot of dough with ease.

Consider the OONI HALO! I looove mine! It is a beast and make gorgeous dough! I had an Ank and hated it, I sold it so hard to use! I haven’t used a Bosch but my Ooni is THE BEST!

I have a Bosch. It works amazing for bread and terrible for cookies using their paddles because they always break. they're plastic paddles for the cookies. I love my Bosch for bread and I make about 30 to 50 loaves a week of yeast bread

I should have mentioned that I am teaching Home bakers so I want to use something that would be practical for them. We are mixing small batches of dough so I don’t wanna go with something super commercial.

I inherited my Gmas Bosch. 50+ years and still running like a champ with OG parts. Run them through a high heat dishwasher for over 20 years and no cracks. Bosch is made so well.

I just ordered the Artiste and it should be here this week. It’s the baby sister to the Bosch mixer and not as expensive. I watched A LOT of videos before going with the Artiste. The Artiste can handle up to 8 lbs of dough while the Bosch can handle up to 14-ish pounds of dough from my research. I’m using it for cookies and buttercream.

I have had a Kitchenaid for years. Bought a Bosch a couple of years ago. Awesome for larger batches, easy to add ingredients. I do small batch stuff in Kitchenaid and large for Bosch. Spend the extra money to upgrade some of the accessories.

I switched to the Ooni Halo Pro, which can do large amounts. Ooni just came out with a smaller version...and honestly I'd check them out. I love the Halo Pro...wouldn't trade it for anything.

I was going to buy an Ankarsrum or Bosch, but I make cookies with cold butter straight from the fridge and everything I've read said they can't handle cold butter. If I get one it will be for bread doughs.
