If your current breakfast strategy involves staring blankly into the cupboard while re-boiling the kettle for the third time, this One-Pan Baked Weet-Bix is here to restore your peace of mind. FULL RECIPE 2 large eggs ¾ cup plain yoghurt 3 tbsp vegetable oil ⅓ cup honey ¾ cup cake flour ¾ tsp baking powder ¼ tsp bicarbonate of soda For the chocolate flavour: 4 biscuits WEET-BIX Chocolate Flavoured Biscuits ½ cup chocolate chips, for the topping For the strawberry flavour: 4 biscuits WEET-BIX Strawberry Flavoured Biscuits 3-4 strawberries, sliced, for the topping For the banana flavour: 4 biscuits WEET-BIX Banana Flavoured Biscuits 1 large banana, peeled & sliced, for the topping 1. Preheat the oven to 180°C and grease and line a 22cmx23cm baking dish with baking paper. 2. In a mixing bowl, add the eggs, yoghurt, oil and honey and whisk until combined. Add the cake flour, baking powder and bicarbonate of soda. Lightly crush the WEET-BIX flavour of choice into the bowl and whisk until a batter has formed. 3. Transfer the batter the prepared and spread to for an even surface. Sprinkle the topping of choice to complement the WEET-BIX flavour used. *Chef’s Tip: If using fruit, thinly slice, to ensure they stay on the top of the dish after baking 4. Bake for 25 minutes until golden brown and cooked through. 5. Cool the bake completely before cutting into 4-6 pieces. Transfer into prep containers and refrigerate for the week. *Chef’s Tip: Heat in the microwave for 20 seconds and add toppings of choice before eating
