**Butter Chicken Meal Prep | Diabetic Meal Prep Series ** My dad was recently diagnosed with Type 2 diabetes, so I’m learning how to make meals that are high in protein, loaded with veggies, and lower in carbs. I’m definitely not a nutritionist or a diabetic meal prep expert—I’m just a son trying to help his dad eat a little better. If you have experience with diabetic-friendly cooking, I’d love your tips, advice, or recipe ideas in the comments! I’m learning as I go, and I know a lot of you have valuable knowledge to share. Per Serving • 49g Protein • 9g Net Carbs • 0g Added Sugar  Ingredients Chicken * 3 lbs boneless, skinless chicken breast * 1 tbsp olive oil * 2 tsp garlic powder * 2 tsp paprika * 1 tsp turmeric * 1 tsp salt * ½ tsp black pepper Sauce * 2 tbsp butter * 1 large onion, diced * 4 cloves garlic, minced * 1 tbsp fresh grated ginger * 2 tbsp garam masala * 1 tsp cumin * 1 tsp paprika * 1 (15 oz) can tomato sauce * 1 cup heavy cream Veggies * 2 heads broccoli * 1 head cauliflower * 2 zucchini * 2 tbsp olive oil * Salt & pepper Directions 1. Roast the broccoli, cauliflower, and zucchini at 425°F for 25–30 minutes with olive oil, salt, and pepper. 2. Season the chicken with olive oil, garlic powder, paprika, turmeric, salt, and pepper. 3. Cook the chicken until it reaches 165°F, then remove from the pan. 4. Sauté the onion in butter for 5–6 minutes. Add the garlic and ginger and cook for 1 minute. 5. Stir in the garam masala, cumin, and paprika for 30 seconds. 6. Add the tomato sauce and simmer for 10 minutes. 7. Stir in the heavy cream, then return the chicken to the pan and simmer for another 5–8 minutes. 8. Divide the butter chicken and roasted veggies into meal prep containers and enjoy! If you’re on a similar journey—or have someone you love who’s managing diabetes—follow along. We’ve got a lot more healthy, high-protein meal prep coming. #diabetic #mealprep #healthylifestyle
