you know it's because of the salt, And the dry atmosphere you can do this with all organic fresh meat it does basically the same thing If you have a dry area to do it in it called aerobic aging. you can do this with beef chicken and lamb unprocessed fresh off the animal and just salt it and hang it up. you can basically have it sit for years. And it'd still be edible.
