Canh Bầu Thịt Viên — Vietnamese Opo Squash Soup with Pork Meatballs 🇻🇳 This is one of those simple  Vietnamese home-cooked dishes that we grew up eating with rice. The opo squash is light and slightly sweet, the pork meatballs are tender, and the broth comes together in about 15 minutes. We usually serve canh alongside hot rice and a savory dish to complete the meal. Ingredients: • 1 medium opo squash, about 1 lb • 10 oz ground pork • 2 green onions, whites and greens separated • 3 large garlic cloves, minced • 1 large shallot, minced • 1 tbsp neutral oil • 1½ quarts water • 2 tsp salt, divided • 2 tsp fish sauce, divided • ½ tsp ground black pepper, divided Instructions:     1    Peel the opo squash and cut it into thick matchsticks. Mince the garlic and shallot, then slice the green onions, keeping the white and green parts separate.     2    In a bowl, combine the ground pork with the green onion whites, half of the garlic and shallot, 1 tsp salt, 1 tsp fish sauce, and ¼ tsp black pepper. Mix well and set aside.     3    Heat the oil in a pot over medium-high heat. Add the remaining garlic and shallot and cook for about 20 seconds, until fragrant.     4    Carefully add the water and bring it to a boil.     5    Shape the pork mixture into small meatballs and drop them directly into the boiling broth. Cook for about 5 minutes. Skim off any foam that rises to the top if needed.     6    Add the opo squash and simmer for another 5 minutes, or just until tender. Try not to overcook it or the squash can become too soft.     7    Season the broth with the remaining 1 tsp salt, 1 tsp fish sauce, and ¼ tsp black pepper. Adjust to taste.     8    Turn off the heat and finish with the green onion tops and a little extra black pepper.
