As an Austrian: - 9/10 on the Schmarrn. Traditionally it's pulled with forks, but I get why you wouldn't want to do that in your pan. - 8/10 on the Zwetschkenröster. Italian plums and Zwetschken (blue plum, German plum) are different in both colour and taste. And it's usually cooked longer, you want the sugars from the plum to partially caramellize, to get a bit of that burnt sugar bitterness. But other than that the best recreation of Kaiserschmarrn I've seen an US-American make.
