Pops' Reverse Seared Top Round INGREDIENTS: 1 2-3 pound top toast aka London Broil.  Mine was a small roast cut in half because it was only serving two of us  Marinade 2 tablespoons of soy sauce  2 tablespoons of balsamic vinegar  1/4 cup of extra virgin olive oil  1 tbsp of Worcestershire sauce  4 grated or minced garlic cloves  1 teaspoon of Dijon mustard 3/4 of a teaspoon of baking soda ( for tenderizing)  Salt, pepper, and paprika to taste  Make perforations in your rose with either a sharp knife or a puncture tool to help it absorb the marinade  Mix the marinade well and place in a ziplock bag with the meat in the refrigerator for a minimum of 2 hours, preferably overnight.  Pull the meat out an hour before you begin to cook to bring it to room temperature  Place it in the oven on a cooking rack at 250 to 300° depending on how much time you have. The lower and slower the better. I would suggest you get a temperature probe so you can keep track of it on your app, but if you don't you'll need a instant rate thermometer and you'll need to check it regularly.  I pull mine out at 80°, because I like it rare. My final temperature is somewhere around 110° after resting.  So, if you like it medium rare for example then you would pull it at about 100°, knowing that the searing and the resting will bring it up to about 130 Put it on a very hot cast iron pan with a little avocado oil and let one side sear well before you flip it and then let the other side sear well.  The timing of this step depends on how fat your roast is. If it's thin then I would only do a minute or two on each side, but if it's fat you can afford more time.  Just use your eyes and instincts, and a thermometer. The next step is the most important. LET IT REST FOR 10 MINUTES! This gives the meat time to relax and pull back its juices.  If you cut into it prematurely you will lose all the juice and dry out the steak.
