Animals can eat raw meat and eggs because their digestive systems and immune defenses evolved to handle high levels of bacteria and parasites. Humans can actually eat some raw meat and eggs if they are fresh, but modern industrialized meat processing and our evolved biology make raw food much riskier for us.
