Marry Me Chicken 🍅✨ A classic dinner idea made a little lighter and packed with protein! This meal is made in one pan and comes together in about 30 minutes. It's the perfect comfort food meal while also helping you hit your protein goals! Makes 4 servings. 4 small chicken breasts (or 2 large cut in half) 1 tbsp olive oil 1 tsp Italian seasoning ½ tsp paprika ½ tsp garlic powder Salt and black pepper, to taste 3 cloves garlic, minced ¾ cup low-sodium chicken broth ⅓ cup chopped sun-dried tomatoes, drained 1 cup low-fat cottage cheese ½ cup fat-free milk ½ cup freshly grated Parmesan cheese 2 cups fresh spinach Fresh basil, for garnish 1. Blend the cottage cheese and fat-free milk until completely smooth and creamy. 2. Season the chicken with the Italian seasoning, paprika, garlic powder, salt, and pepper. 3. Heat the olive oil in a large skillet over medium heat. Cook the chicken for 4 minutes per side until golden. Transfer to a plate. 4. Reduce the heat to low-medium and cook the garlic for about 30 seconds until fragrant. 5. Pour in the chicken broth, scraping up any browned bits from the pan. Stir in the sun-dried tomatoes and simmer for 2-3 minutes. 6. Remove the skillet from the heat and let cool for about five minutes. 7. Slowly whisk the cottage cheese mixture into the skillet until smooth. (Make sure tomato mixture is cool enough before adding the cottage cheese to prevent curdling!) 8. Add the spinach and cook until wilted. Add Parmesan and mix until melted. 9. Return the chicken to the skillet and warm over low heat for 3-4 minutes. Garnish with fresh basil and enjoy! Serve over pasta, rice, vegetables or bread. #marrymechicken #easydinnerideas #onepanmeal
