@savannahkbarry: an evening at my rom com house 🧚🌀🪄🍊 recipe below!!!!! #whimsy #recipes #cozyhome #homedecor #livingroomdecor Honey Mustard Chicken Harvest Bowls 🥗🍯 Ingredients * A few boneless, skinless chicken thighs * dijon mustard * soy sauce * honey * olive oil * garlic powder * paprika * Salt & pepper * 1 medium sweet potato, cubed * A few carrots, sliced how you like * 3 cups chopped kale * 1 Honeycrisp apple, sliced * ¼ cup roasted chickpeas (I bought pre roasted chickpeas and this was so yummy!) * ¼ cup crumbled goat cheese Lemon Vinaigrette (measured with my pure heart) * A few hefty glugs of olive oil * 1/4 cup tbsp lemon juice * 1/4 cup Dijon * Big ole drizzle of honey * Salt & pepper Directions 1. Preheat oven to 425.. Mix Dijon, honey, soy sauce, olive oil, garlic powder, paprika, salt, and pepper. Coat the chicken and bake for 45 minutes. 2. Toss the sweet potato and carrots with olive oil, salt, pepper, garlic powder, and paprika. When the chicken has 35 minutes remaining (10 minutes into baking), add the vegetables to the oven and roast until tender and caramelized!!! 3. Whisk together the vinaigrette ingredients. 4. Toss the kale with a little vinaigrette, then top with sliced chicken, roasted vegetables, apple, goat cheese, and crispy chickpeas. Finish with the remaining vinaigrette and enjoy!
