@househaaks: I started pressure canning last year and prefer it to water bath canning. Although some recipes don’t work for pressure canning, I enjoy when they do! This is a fantastic way to preserve fresh green beans. Here’s my recipe! *10 lbs of cut green beans (this will yield about 9 quarts) Wash and cut green beans to about 2” pieces Fill quart jars with green beans. Add 1 tablespoon cooked/chopped bacon and 1 teaspoon canning salt. Fill with water (I use filtered water) leaving 1” headspace. Add lids and secure with rings (finger tight) Process in a pressure canner at 10lbs pressure for 25 mins. Remove when safe (always follow your pressure canner’s manual!) and leave alone for 24 hours.
