Full recipe below! Rachael’s Homemade Snickers Bars 🍫🥜 Makes: One 9×9-inch pan Chocolate Layers * 18 oz milk chocolate chips * 2 tbsp coconut oil (optional) Instructions * Melt all of the chocolate together with the coconut oil (if using) in 30-second intervals, stirring well after each. * Pour half into a parchment-lined 9×9 pan and spread evenly. * Refrigerate until firm. * Reserve the remaining chocolate for the top layer. ⸻ Nougat * ¼ cup unsalted butter * 1 cup granulated sugar * ¼ cup heavy whipping cream * 7 oz marshmallow creme * ¼ cup creamy peanut butter * 1 tsp vanilla extract * Pinch of salt * ½ cup powdered sugar 💡 International Tip: If you can’t find 7 oz of marshmallow creme, melt 1 tablespoon of butter first, then add 7 oz of regular marshmallows and stir until smooth. Use that in place of the marshmallow creme. The texture won’t be exactly the same, but once it’s mixed into the nougat, it works well and still tastes delicious. Instructions 1. Melt the butter in a saucepan. 2. Stir in the sugar and heavy whipping cream. 3. Bring to a gentle boil, stirring continuously so the sugar dissolves and the nougat stays smooth. 4. Stir in the marshmallow creme, peanut butter, vanilla, salt, and powdered sugar until smooth and fluffy. 5. Spread over the chilled chocolate layer. 💡 Tip: Before adding the nougat, lightly scratch the chocolate layer with a fork. It helps the layers stick together. ⸻ Peanut Layer * 1½–2 cups salted roasted peanuts Sprinkle the peanuts evenly over the warm nougat and gently press them in. 💡 Tip: Don’t let the nougat fully set before adding the peanuts. You want them to sink in just a little so the caramel can flow between them and help hold every layer together. ⸻ Homemade Caramel * 1 cup granulated sugar * 6 tbsp unsalted butter * ½ cup heavy whipping cream, warmed * 1 tsp vanilla extract * Pinch of salt Instructions 1. Warm the heavy whipping cream in the microwave. 2. Melt the sugar over medium heat until it becomes a smooth amber caramel. 3. Stir in the butter until melted. 4. Slowly pour in the warm heavy whipping cream while stirring. 5. Stir in the vanilla and salt. 6. Pour the caramel over the peanut layer and spread evenly. 7. Refrigerate until firm. 💡 Tip: If making caramel from scratch feels intimidating, you can substitute the caramel from my homemade Twix bars using butter, brown sugar, and sweetened condensed milk. ⸻ Top Chocolate Layer * Remelt the reserved chocolate in 30-second intervals. * Pour over the chilled caramel layer. * Spread evenly. * Refrigerate until completely set before lifting out with the parchment paper and slicing. I actually like to throw mine in the freezer. Then I’ll let it sit on the counter for about 5–10 minutes before cutting, or I’ll use a warm knife.
