@amanda__.please: My Cheat's Cinnamon Coffee Cake Muffins with Mingle Seasonings x Fresh Fodder Puddings Ingredients: Wet Ingredients: 1 cup cooked or canned apple (soft) 2 eggs ½ cup honey ½ cup melted coconut oil 1 x 200g tub Fresh Fodder Cinnamony Donut Protein Pudding Dry Ingredients: 1 cup rolled oats 2 cups self-raising flour 1 teaspoon ground cinnamon Pinch of salt Topping: ¼ cup rolled oats ¼ cup desiccated coconut Glaze: 2 tablespoons icing sugar 1 tablespoon water Method: Preheat your oven to 180°C fan-forced. Grease or line a 6-hole jumbo muffin tin or a 12-hole standard muffin tin. In a large bowl, whisk together the apple, eggs, honey, melted coconut oil and Fresh Fodder Cinnamony Donut Protein Pudding until smooth. Add the oats, self-raising flour, cinnamon and salt. Mix until just combined, don't overmix. Divide the batter between your muffin tray. Sprinkle the tops with the rolled oats and desiccated coconut. Bake for 25 minutes for 6 large muffins, or 18–20 minutes for 12 regular muffins, until golden and a skewer inserted into the centre comes out clean. Mix the icing sugar and water together until smooth, then drizzle over the warm muffins.
