pastry chef here! usually for royale/custard type tart, we blind bake first to cook the base so that tak soggy or risk of undercooking. probably around 7-8 mins then baru pour in liquid, bake like normal balik

U kene bake 1/2 cook puff punya base dlu. Then sejukan. After that baru bake lagi bersama egg mix tu. selalu tengok staff oriental buat mcm ni. 😂😂😂

i think the bottom part is undercooked cause the heat came from the top of the cooker only and not around the whole thing

Cause you use a grilled where there is only top heat. The bottom doesn’t get as much heat and that’s why it’s mushy. Wrong tool
