Sous Vide Ribeye with a Pan Sauce Ingredients: - 3 13 oz ribeyes - Handful of lightly crushed, peeled garlic cloves - 2 sprigs thyme - 2 sprigs rosemary - 4 tablespoons butter - 2 tbsp red wine Salt and pepper Pan Sauce -liquid from the sous vide bag -2 tbsp heavy cream -1 tbsp red wine -2 tbsp chopped sautéed mushrooms Instructions: 1. Add the top ingredients to a vacuum seal bag. 2. Place the sealed bag in a water bath with a sous vide stick. Cook the ribeye to your preferred temperature. For medium-rare, cook at 124°F for one hour. 3. Once cooked, remove the steak from the bag, reserving all the drippings. 4. Season both sides with salt and pepper, then pat them dry with paper towels. 5. Heat a heavy cast-iron or stainless steel skillet on high until it begins to smoke. Add a thin layer of oil. (Pro tip: turn on fans and open windows first) 6. Place the steak in the skillet and sear for one minute. Flip and sear the other side for one minute. Flip and sear for another 30 seconds on each side to achieve a nice crust. 7. Let the steak rest for a few minutes while you make the pan sauce. 8. Add the reserved drippings with the garlic and herbs to the pan. Then add the heavy cream, red wine, and mushrooms, and remove the aromatics afterward. 9.
