Ingredients for Takoyaki Batter 1 cup all-purpose flour 2 teaspoons dashi powder 1 teaspoon soy sauce 2 large eggs 1 2/3 cups cold water Filling 1/2 lb cooked octopus (tako), cut into bite-sized cubes 2 green onions (scallions), finely chopped 2 tablespoons pickled red ginger (beni shoga), finely minced 1/4 cup tempura scraps (tenkasu) Toppings (As Pictured) Takoyaki sauce (or tonkatsu sauce) Japanese Kewpie mayonnaise Bonito flakes (katsuobushi) Dried green seaweed powder (aonori) Steps in making Takoyaki Step 1: Whisk the batter In a large bowl, whisk together the eggs, cold water, soy sauce, and dashi powder. Sift in the flour and whisk until completely smooth. Transfer the batter to an easy-pour pitcher or measuring cup. Step 2: Heat and oil the pan Heat a takoyaki pan over medium heat. Generously oil each mold cavity and the surrounding surface using a silicone brush or paper towel dipped in vegetable oil. Step 3: Pour the batter Pour the batter generously into the cavities until they are full and slightly overflowing onto the flat rim of the pan. Step 4: Add the fillings Drop a piece of cooked octopus into the center of each hole. Scatter the minced red ginger, chopped green onions, and tempura scraps evenly across the entire surface. Step 5: Cut and rotate the balls Once the bottoms set (about 2 to 3 minutes), use skewers or takoyaki picks to cut the overflow batter between the holes. Push the extra batter into the molds and turn each ball 90 degrees. Pour a tiny drop more batter into the empty side if needed. Step 6: Shape and crisp Continuously rotate the balls every minute or two, tucking any edges inside, until they form perfect golden-brown spheres with a crispy exterior. Step 7: Sauce, garnish, and serve Transfer the hot takoyaki to a boat tray or plate. Brush generously with takoyaki sauce, drizzle with Kewpie mayonnaise, and top with dried green seaweed and a generous handful of dancing bonito flakes!
