Brown Butter Maple Granola 🤎 If you’ve never made granola from scratch, start here. Brown butter makes it extra rich and nutty, maple gives it the coziest sweetness, and the egg white is the secret to those big crunchy clusters. You’ll need: 3 cups old-fashioned rolled oats 1 cup pecans, roughly chopped ½ cup sliced almonds ½ cup unsweetened coconut flakes 1 tsp cinnamon ½ tsp kosher salt 6 Tbsp unsalted butter ½ cup pure maple syrup 2 Tbsp brown sugar 1 tsp vanilla bean paste 1 egg white To make it: Preheat your oven to 325°F. Brown the butter over medium heat until golden and nutty. Remove from the heat, then stir in the maple syrup, brown sugar, and vanilla. In a large bowl, combine the oats, pecans, almonds, coconut, cinnamon, and salt. Pour the brown butter mixture over everything and toss until well coated. Whisk the egg white until very foamy, then fold it into the granola. Spread onto a nonstick or parchment-lined baking sheet and press it firmly into an even layer. Bake for 30 to 35 minutes, rotating the pan halfway through. Don’t stir it! Let it cool completely before touching it. This is the hardest part 😂 Once cool, break it into big crunchy clusters.
