Ingredients * 2 large rice paper sheets * Shredded Mexican cheese blend * Grated Parmesan cheese * Smoked paprika Instructions 1. Sprinkle a thin, even layer of grated Parmesan cheese onto a clean work surface. 2. Wet one rice paper sheet , then place it directly over the Parmesan. 3. Sprinkle a layer of Mexican cheese over the rice paper. 4. Wet the second rice paper sheet and place it on top. Sprinkle with more grated Parmesan that’s left over and a little smoked paprika. 5. Cut into long strips and arrange them in a single layer on a parchment-lined microwave-safe plate. 6. Microwave for about 2 minutes, or until the rice paper looks crisp.
