@raisingfoxess: For my internet besties who refuse to settle for a sad, boring dessert 🤝 I can only promise this won’t be sad if you start with a @lundbergfarms organic rice cake... they're perfectly crunchy and sturdy enough to hold allllll the good stuff 🍫🍒 #lundbergpartner (makes 1 cake) 1 Lundberg Rice Cake ¼ cup vanilla Greek yogurt ⅛ tsp almond extract Pinch of salt 3-4 dark sweet cherries, finely diced then patted very dry (plus 1 whole cherry with stem for topping) ¼ cup chocolate chips ½ tsp coconut oil In a small bowl, mix together the Greek yogurt, almond extract, and salt. Fold in the diced cherries. Spread the filling over the rice cake and freeze for 15–20 minutes. Melt the chocolate chips with the coconut oil until smooth. Pour over the chilled rice cake, letting the chocolate cover the filling. Immediately top with a whole cherry. Freeze for 5 minutes, until the chocolate is set. The sooner you eat this, the crunchier the rice cake will be (don’t wait more than 1 hour).
