My fav seitan recipe uses vital wheat gluten (cheap-ish in a big bag) and a tin of chickpeas! The recipe is Seitan Chicken from Super Happy Win Food

try dehydrated soya chunks and mince they are sooo much cheaper than branded frozen/fridge meat alternatives and have lots of protein + rlly good texture
