Crockpot Bourbon Chicken
Ingredients:
2 pounds boneless, skinless chicken thighs
3/4 cup brown sugar
3/4 cup soy sauce
1/3 cup bourbon, whiskey, apple juice, or chicken broth
2 cloves garlic, minced
Kosher salt and pepper, to taste
2 tablespoons cornstarch
3 tablespoons cold water
Season both sides of the chicken thighs with salt and pepper, then place them in the bottom of your crockpot.
In a medium bowl, combine the brown sugar, soy sauce, bourbon (or your chosen liquid), and minced garlic. Stir well to mix the ingredients thoroughly.
Pour this flavorful mixture over the chicken thighs in the crockpot, ensuring they are evenly coated.
Cover the crockpot with the lid and cook on low for 4 hours or on high for 3 hours until the chicken is tender and cooked through.
Thirty minutes before the chicken is done, whisk together the cornstarch and cold water in a small bowl to create a slurry. Add this to the crockpot, stirring well to thicken the sauce.
Once the sauce has thickened, and the chicken is melt-in-your-mouth tender, serve it hot over rice. Garnish with green onions if desired.
