In the novelization anakin does the jump attack in mustafar because he wanted to replicate what obiwan did to Darth maul to show obiwan that he is stronger than him. That is why obiwan told him “don’t try it” cause he saw it coming

He actually could, but that would've meant that he was escaping the fight, something Anakin's ego wouldn't allow at that point, he intentionally meant to jump exactly to fall right behind Kenobi so that he'd slash him, only thing he didn't calculate was that Kenobi was willing to cut him up

So for everyone wondering, Anakin was obsessed with the Obi-Wan and Maul fight. That is the same move Obi pulled on Maul but Obi saying "Don't try it" he knew what he was going to do, Anakin didn't think Obi would actually react. If he did in fact jump slightly out of his reach it would've been different obviously. But at the same time Obi had never needed to use this move to defend himself so he himself had no idea what he was doing against Anakin leading to the emotional moment afterwards.
