I've been keeping these prepped in my fridge for when I'm feeling snackish and want to be sure I'm eating adequate protein that will keep be satiated. Complete with healthy fats and minimally-sweetened with maple syrup, these protein bars are the perfectly subtly sweet treat for that 3pm craving. Ingredients: 1 cup almond flour ¼ cup vanilla protein powder 2 tablespoons coconut flour ¼ teaspoon sea salt ¼ cup maple syrup 2 tablespoons nut or seed butter of choice 2 tablespoons melted coconut oil 1 teaspoon vanilla extract 3 tablespoons mini dairy-free chocolate chips + more for topping Instructions: In a medium bowl, whisk together almond flour, protein powder, coconut flour and salt. Stir in maple syrup, almond butter, coconut oil, and vanilla until a soft dough forms. Fold in chocolate chips. Press the cough into a parchment-lined loaf pan. Top with more chocolate chips. Refrigerate for at least an hour until the dough firms up. Slice into bars and store in an airtight container in the fridge for up to 1 week or freezer for up to 1 month.
