I’m from the northest part of Mexico, Tijuana and I called them sopes 🥰 The way I make them is… after you do your masa and form the balls and press them into a kinda tortilla I cook them a little bit in a comal without the oil then press the edges and then fry them in oil that’s the way I was taught by my mom and I think is easier. Try it next time!

Pro tip here you can cook them with no oil first on a skillet both sides flip them. Then remove them and automatically pinch them to create the shape after that fry them. We usually have them with refried beans shredded lettuce cheese and onion 😝 top it off with sour cream and salsa. So good 😋

If you want it spicy, boil 6 guajillos (deseed) and 2 árbol with the tomato and I promise it’s sooooo good. I salt it with chicken bouillon instead of salt … it’s amazingggggg.

I would recommend just putting it on on the pan without oil, they naturally don’t stick when the temp is right. Also youse Manteca (pork fat) for a more authentic taste!
